Here Come The Scapes!

Today's garlic scape harvest kicked up the energy here at the farm! And although the emergence of this delicious flower stalk tells us that our garlic is well on it's way to full maturity, we'll be heading into the fields several more times in the following weeks to collect them for our CSA members and to be sold at the markets. Of course, we like to keep some of them for our own consumption as well. One of the recipes for scapes currently floating around the farm right now comes from Derrick and Larry's mother. It's a tasty green dip made with cannelini beans and it is listed below. Be sure to give it a try! Ingredients

Buried Treasures

It's no secret that this Spring has been a rainy one for our region, so on a day where it was too wet to plant crops, we went through a few beds and pulled out a bounty of green Spring garlic. It was a muddy mess digging them out of the ground, but the benefit of having an abundance of early greens ready for market (and for our kitchens)  made it all worth it. They've been a fine addition to our morning omelets and when sauteed in butter, can be paired with red potatoes, pasta or even stirred into rice. The greens are wonderful raw in a salad too, as their sweet subtle flavors capture the essence of what seasonal eating in Springtime is all about!

The winds were tumultuous at times and the rain poured like crazy over what seemed like most of the days. Yet, the early part of this Spring also had it's calm and crisp nights.

Spring Is In The Air!

All signs are pointing to Spring and we've been busy at the farm, gearing up for another great season. Our CSA shares have increased, we're building a new high tunnel in the upper field and putting some finishing touches on our brand new root cellar so that we can extend the season through the upcoming winters. It's nice to see garlic that we planted last fall popping up through the hay mulch as it gets ready to push through for summer. We continue to seed starts in the greenhouse and we can't wait to start transplanting. It's been a long winter!
