We grow 3 varieties of garlic:  Amish Rocamboule, Chesnok Red, and German White. All 3 are stiffneck garlics and are well suited to our climate.

The garlic scape is an often overlooked delicacy. The scape is the flowering stem of the garlic plant that grows above ground.    We cut the scapes off all plants before they blossom.  This process allows the plant to put more energy into creating a magnificent garlic bulb!  Scapes taste very similar to the garlic itself but a tad less spicy.  Farm to Table Co-Packers in Kingston NY helps us process the scapes into delicious pesto that we sell at the market and give to our CSA members.
